Oh the smell and taste of sugar roasted almonds! Here is the original Danish recipe of sugar roasted almonds. A true Christmas treat!
250 g almonds
250 g sugar
1 dl water
Prepare a roasting pan with baking paper, which you can use for the almonds to cool down at when they are done.
Put all the ingredients in a pan at medium heating. Stir until the mass turns into a sticky syrup. Keep mixing until all the water has evaporated, and the sugar again will be dry. At this point you need to be extra careful, that it doesn’t burn. The sugar will melt again and now you need to fold the almonds in the sugar, so the mass will stick to the almonds.
When all the sugar has melted, the almonds needs to be spread over the roasting pan. Use two forks to separate the almonds. Let it stiffen, and then the sugar roasted almonds are ready.
